And this keto thing is going ok. I've stuck with it mostly. Since starting i've lost 7.8 pounds, hopefully ten by the end of this week. My meals have sort of gotten boring since i'm pretty lazy. But i baked my first keto friendly dessert. Peanut butter chocolate cookies. I used almond flour instead of wheat flower and semi-bitter chocolate. There are some carbs (like 5 per serving which is two cookies) but it's better than no sweets at all. I have to make sure to use an egg next time too, almond flour/meal crumbles pretty easily and doesn't hold as well as wheat flour. But it tastes great! My father ate 3 right away. Forgot that anything with peanut butter will draw him like a moth to a flame.
I have plans to make a keto friendly cheesecake. Just have to remember to get cream cheese. And find a better tasting sugar substitute. I've learned that i HATE the taste of Stevia. I honestly can't stand it. So none of that.I've heard that Erythritol isn't that bad though. I just have to find some. Hopefully nt at the health food store, they over charge for everything. I have started makingsure that i get enough fats now. Sour cream is my new best friend.
I didn't exercise much the last few days but still lost 2.2 pounds (out of the number above) so that's proof keto works. It's been so rainy i really haven't been able to go out. But i have an exercise bike so i guess the real reason is that i'm lazy. Tomorrow i'll ride for at least 1/2 and hour, promise!
