Cheating

So i cheated a bit over the weekend. I had rice. Fried rice. Guyanese fried rice and it was so good! I regret it only a little. Right now i feel uncomfortably full, i forgot how filled up rice makes you feel. It had a lot of veggies that you're not supposed to eat on keto in it so that doesn't help. I also made some actual keto friendly food over the weekend. I made that keto cheesecake I was talking about before. It doesn't taste perfect because i forgot to buy cream but it does taste good. Especially the crust. The chocolatey-ness is awesome!  I made it with flax meal rather than almond flour and that raised the fiber count in the cake. The fiber was good for me but it seems to have hit my mother the wrong way. She went to the bathroom twice. As i said, i forgot to buy cream and didn't even have milk so to thicken the actual cheesecake part I added an extra egg. So it tastes sort of like an egg cream. I also used Xylitol rather than Swerve because i don't have Swerve. I know some people would have used Stevia and i do have that but i hate that bitterish undertone/aftertaste that Stevia has. Xylitol worked perfectly for me. Not bad at all. But i'm planning on making it the right way next time. I think i'll do half flax and half almond meal next time too.
